Zevran finds Hawke good-looking, and he's always interested in men and women who are powerful and strong. He's interested in learning about the guy who finally got the tomcat Anders to settle down - not all that aware of how much Anders has changed, after all. He actually trusts and respects Hawke somewhat mostly because Fenris holds him in such high regard, though he's aware people can definitely change and be different in their own worlds so it likely won't be a full and complete trust for some time, if ever. His opinion will probably improve once he spars with the guy, though he'll tease him mercilessly and do the attacking-weak-spots thing rogues are so good at.

He's actually not that into guys with beards though, they chafe intimate bits. He is also more than a little protective of Anders and Fenris, knowing that Fenris seems a bit smitten. In other words, he thinks Hawke is a pretty cool guy but he's wary of him, and not just because he's a big guy with a sword!
